Tzatziki (zaht-SEE-kee) (Cucumber Garlic & Lemon Sauce)

This is light and multi-purpose sauce inspired by Greek traditional cooking but without traditional labor to prepare it. Make a good batch of this, as it keeps for at least a week, and enjoy with grilled lamb kebabs or chops, as a vegetable dip, in a stuffed pita pocket or condiment with a veggie burger.

Ingredients
2 cups non- or low-fat plain (organic) yogurt
1 each English cucumber, rinsed clean, not peeled, ends trimmed
3 tbsp Extra-virgin olive oil
2 to 3 TBS Santa Cruz Organic® 100% Lemon Juice
4 cloves Fresh garlic, minced
2 tbsp Fresh mint or dill, minced
½ tsp Sea salt
To taste Freshly ground black pepper

1. Place yogurt in medium-size mixing bowl. Grate cucumber with skin-on directly into bowl; add all grated cucumber, up to two cups, from the grater into the yogurt and mix well until blended

2. Add olive oil, lemon juice, garlic, mint or dill and blend together

3. Add salt and pepper to taste

4. Serve with mint or dill sprig and a drizzle of olive oil; refrigerate until ready to serve.
